Taittinger champagne reception with canapés (included in the price), followed by a refined eight course Menu Dégustation:
- Velouté « Bloody Mary »
- Butterfly king prawn in tempura batter and a spicy preserve
- Sea bass with wilted vegetables and a foaming emulsion
- Tequila sorbet
- Slow roasted shoulder of lamb with cranberry and orange confit served on a bed of game chips
- Salad of duck foie gras and chicken livers accompanied by lardons in a balsamic reduction with soufflé potato
- Selection of cheeses
- Assiette de gourmandises « Saint Sylvestre »
Followed by Coffee and Petits Fours.
Fireworks at midnight then dancing to music from the eighties, nineties and noughties till 2am.

The New Year’s Eve gala dinner with music will be preceded by one of our now famously generous Taittinger champagne receptions.
Périgueux, Bordeaux and St Émilion remain open throughout apart from Christmas Day itself, so there’s always somewhere to explore. And at home there will be (entirely optional) activities available such as a wine tasting to help you discover some of the secrets of the local wines.
